I've been busy trying to balance it all and I haven't been doing a good job at it. LOL That is until NOW! Sometimes you have to take a step back and reevaluate things. That is exactly what I did. This past week has been filled with revelations and clarity. I am uber excited about the future.
Anyway with the balancing act I've neglected some things that I've wanted to share with you but I'm working on restructuring that. So here you go.... One of my favorite salads. I make this all of the time for lunch. It's so quick easy and flavorful. I literally ate this salad EVERY DAY last week. Sigh.. at least it's healthy.
The recipe and dressing I use are below. If you decide to give it a try, let me know how you like it!!
1/2 LB Large peeled shrimp
2 Large strawberries
2 Large pineapple chunks
1/4 Cup of red onion (or to your liking)
1 Hard boiled egg
1/4 Cup of tomato (or to your liking)
1 Table Spoon of Asiago Cheese
2 Cups of Mixed Greens
Use seasoning to your discretion
Chop all fruits and veggies
Grilled shrimp in 2 tablespoons of olive oil
Season and cook on each side until no longer pink
This is the dressing I use. It is soooooooo delicious
