Recipe: Curry Chicken Salad

Hey loves,
Cooking is a huge part of my life. It's something that I love and enjoy. It brings me so much peace. I decided to embrace that part of my journey and start sharing it with you guys. My family loves my curry chicken salad (although they claimed they didn't like chicken salad at all) This recipe is quick and easy so I make it in large portions to have for lunch or snacks during the week. I'm not really a girl that measures when she cooks but here goes nothing. LOL
Ingredients:
1 rotisserie chicken
1 1/2 cup of good mayo (I use Hellmann's or Dukes)
1/3 cup of cooking white wine
1/4 cup of chutney (mayors grey)
3 teaspoons of curry powder
A handful of green onions (sorry I don't measure)
A handful of red onion (again I don't measure)
Seasonings:
Garlic Powder
Total Seasoning
Onion Powder
Black Pepper
(season to your liking)
Instructions:
Chop the chicken as finely as you would like
Chop the onions (red & green)
Mix wine, mayo, chutney, and curry power ( I blend it together in a food processor)
Pour the mixture over chicken and onions and mix. Refrigerate for a 30 minutes and eat. ( I love to eat it with the veggie or ranch wheat thins)
